Oat and coconut biscuits
A really easy and quick delicious thick oaty biscuit that is an excellent afternoon snack.
Makes about 18
- 100g unsalted butter
- 30 honey
- 6g bicarbonate of soda
- 30ml boiling water
- 100g plain flour
- 100g brown sugar
- 150g Pimhill jumbo oats
- 100g desiccated coconut
Preheat your oven to 170°C.
Gently melt the butter and honey in a small pan. Meanwhile, combine the flour, brown sugar, jumbo oats and desiccated coconut in a large mixing bowl.
Once the butter and honey are melted, put the bicarbonate of soda and the boiling water into a mug. Once it foams, tip immediately into the pan.
Make a well in the mixing bowl and pour the melted butter mixture into it carefully while mixing.
Once all the ingredients are nicely combined, shape into small balls with your hands. 30-35g balls work nicely, and if you prefer to, use some electric scales to ensure they are all the same and cook evenly. If the ingredients start to stick to your hands too much, wash your hands and wet them slightly. Spread out evenly on a large baking tray lined with baking parchment.
Bake at 170°C for 25-35 minutes until golden brown.
Cool on the tray until they set, and enjoy!
